Here's the Cheesecake Recipe

1 lb of cream cheese
1 c. sugar
5 eggs, separated
1 pint sour cream
1 tsp. vanilla
1 tsp. lemon juice

1 ½ sticks of butter
2 c. flour
4 tbsp. sugar
2 egg yolks

Allow the cream cheese and the butter to soften at room temperature, in separate bowls.
Use a large deep bowl for the filling mixture.

To make the crust, cream the sugar with the butter,
Separate the 2 eggs and mix in the egg yolks, and then the flour.
It should be dry enough to handle but not quite crumbly.
This recipe makes enough for 2 cakes in springform pans, or one large rectangular pan.
Press the dough out with your fingers over the bottom and a little way up the sides
of the pan(s).
Grease the sides of the pan, above where the crust doesn’t reach.

Make the filling by mixing the cream cheese, sugar, sour cream, 5 egg yolks, vanilla and lemon juice.
In another bowl, beat the egg whites until stiff and then fold them gently into the filling.
The original recipe calls for just 5 egg whites, but if you add the extra 2 egg whites left over from the crust recipe, the cake will be extra light and fluffy.

Preheat the oven to 325°.
Pour the filling into the pan(s) and bake for about 1 hour (the center should not be runny).
Turn off the oven and let the cake sit undisturbed for another hour before taking it out.
